I'm not talking about lazy Texas queso which is a brick of Velveeta and a can of rotel which is actually pretty damn good in the right situation. Real queso is a godsend.

As for any discussion about authentic Mexican, it doesn't exist. It's like calling any burger a fake burger or any hot dog a fake hot dog. Unless of course they don't have real meat.
