Which noise cancelling headphones to get?

Sennheiser Momentum or Master and Dynamic MW07 are the best in terms of sound-quality, based on my research. Haven't tried either of them personally.

I saw the Sennheiser ones, but 300 is too much for me for earbuds especially since I’ve been basically using Apple earbuds my entire audio consuming tenure

So, I guess I should update this thread. I went ahead and purchased every pair of headphones that I was deciding about. I got good deals on eBay.

To keep things simple, I was having some comfort issues with the Sony wh-1000xm3's - some pressure on the sides of my ears, but more importantly, on the top/crown of my head. Its gotten much better since then (maybe they just need a breaking in period), and I can easily say that they beat the other headphones in almost every category. The noise cancellation is very powerful, and the audio sounds great - Both of these are better than the Bose. Also, huge battery life, usb-c/quick charge, customization, gestures on the sides of the headphones, etc...really, you get the entire package with these cans.

I still like the Bose (I own the 25 and 35), but might end up selling everything but the Sony's...The Audio Technica's, in particular, were disappointing...They're good, just not amazing. I was expecting way more from them, given the reviews.
