I was fortunate to eat at some of his restaurants during my tenure of living in Louisiana. To this day I still cook dishes out of his cook books. For someone who loves to eat good food, this is a bummer.

I stopped by his first haunt, Commander Palace, when I last visited NOLA. My current jambalaya recipe is an offshoot of his. RIP.
