Thanks to the "Miami Vice' thread below for inspiring this. Trying to avoid all-CGI or mostly wire-fighting scenes, but off the top of my head, and in no particular order:
Downtown LA shootout in "Heat" -- Incredible staging, editing and choreography. Even more chilling when you see news footage of the Hollywood bank robbery a few years later.
Last fight scene in "Lethal Weapon" -- Great stuff. One-on-one, three days to film. Mel Gibson before his recovering alcoholic, directorial phase.
Ship boarding sequence in 'Master and Commander: Far Side of the World" -- Great stuff from the guy who directed "Dead Poets Society" for heaven's sake. Good old-fashioned swashbuckling, cannon-firing action. Even a one-handed, teenage young ensign kicks Frenchman *** in the sequence... with the freaking cannon. And, tons of Russel Crowe being naturally belligerent.
Fight in auto body shop in "Lethal Weapon 3" -- Introducing Rene Russo as a competent butt-kicker... and crotch-smasher. Wince-making, but a lot of fun, too.
House fight scene in "The Bourne Supremacy" -- Admit it, after this scene you picked up a rolled-up magazine just to see if you could kick someone's tail in with it.

Battle at Helm's Deep - The Two Towers: There was some CGI in this, but I thought it deserved being mentioned.
Ong Bak: The whole movie is one bad ass action sequence.
Roddy Piper vs. Keith David - They Live: One of longest fist fights you'll ever see. The first time I saw the movie, it felt like it was 15 minutes long. It's not even good fight choreography or nice moves. Some great mentions above...
Obviously the downtown shootout in Heat was about as good as action gets. The familiarity of the location even more so for Angelinos who drive through that area on their way to Staples. Also, what great sound in that sequence. Totally convincing. Ong Bak was special. All of the tracking camera shots we're especially powerful, and matched the Muy Thai masterfully. Landmark action hero's have one thing in common and that's a "coming out party" type of film. This was Tony Jaa's.
A couple more I can remember:
The foot chase scene in Point Break was visceral and pretty damn funny (Swayze chucking the Pit Bull at Keanu was great).
Nikita's 1st assasination attempt in La Femme Nikita (French version, subtitles) was tense and desperate. Especially after her broken heart of having to kill for a living.
Michelle Yeoh vs. Ziyi Zhang in the locked training room was just short of poetic. The best fight in Crouching Tiger Hidden Dragon.
Blade enters the Vampire Rave and EVERYBODY DIES to open Blade. Another terrific sequence.
Wow so many good ones coming to mind.

Numerous scenes from 24: One that sort of stands out is the scene from season 2 I think...when one of the bad guys tries to escape by helicopter but the fighter jet shows up in time to blow it off before it even gets a chance to take off. That really gave me goose bumps.
Matrix: The famous scene when Neo and Trinity enter the building.
Matrix Reloaded: The highway scene.

The airplane scene in Superman returns was amazing...best one in recent memory...
I also like Angelina and Brad going at it in Mr. and Mrs. Smith (its really all about Angelina)
The brooklyn bridge scene in Fantastic 4 was great too...but mainly because of Jessica..
all time?
Scarface (end gun fight)
Star wars Deathstar scene (that was epic for its time)
LOTR Two Towers..Helms deep battle scene...(i have the chills just thinking about it)
Enter the Dragon- bruce lee
T2- final battle...(is it just me or do other people get choked up at the end of that movie when Arnold is lowered into that lava?) |

Jack Bauer vs Bad guy in the empty stadium.
Great hand-to-hand sequence, which ends when Jack headlocks the bad guy, "runs on the wall" while holding his headlock grip, and eventually, breaking the guy's neck. Awesome. |
